SUMMARY:Les matières grasses
DESCRIPTION:Ce cours est destiné à la compréhension des matières grasses. Nous débuterons avec notre invité Sergio Panzarella\, producteur d’huile d’olive qui nous fera déguster plusieurs huiles différentes. Nous ferons ensuite une dégustation de différents beurres. Enfin nous présenterons un ensemble de matière grasse et leur spécificité…. Puis\, \nPuis nous rangerons tout ! et nous cuisinerons sans aucune matière grasse. Aucune. Ce cours est également un challenge\, comment trouver du goût sans huile\, beurre ou crème. Le but étant bien évidemment de ne pas faire de cuisine vapeur… \nLe menu \nCarottes et baies\, leche de tigre. \nPoulet en croûte de sel\, chips de peau croustillante\, panais grillé\, sauce choux fleur-chocolat blanc. \nMangue potiron-chocolat \n  \n  \nLe cours comprends deux verres de vin.
