Vous y découvrirez ses astuces et conseils de pro dans un cours autour d’un menu gastronomique en 3 plats (entrée\, plat et dessert). \nLe cours consistera à découvrir la gastronomie moléculaire : \n\nLes additifs alimentaires\nLa découverte de l’umami\, ou cinquième saveur\nDémonstration de la sphérification\nL’émulsion: comment faire « un shampoing »?\nL’effervescence : comment l’obtenir?\nLe pouvoir des carraghénanes\, comment obtenir une crème brulée 100% végétale?\nL’azote liquide: comprendre ses dangers\, ses plaisirs… De la glace à -196°C\, aux différentes techniques\nDécouvrir le « souffle du dragon ».\n\nCompris pour le cours\, par personne: la dégustation du menu et 1/2 bouteille de vin et minérales.
